I use the medium mixing bowl for this, but then, I'm a little messy. If you're not, you can probably mix it up in a smaller bowl.
Mash the peanut butter and banana together and then mix in the wheat germ. If you try to add the wheat germ too early, it tends to "glump" into a mess that's harder to mix up. Do not add the chopped nuts yet. Put it in the 'frig til it stiffens up a little.
I like to dust my hands with a little soy flour before I start to roll these out. Helps with the sticking. If getting it all over your hands bothers you, try scooping it up with teaspoons and forming it into small balls. I try to keep these small - around as big across as a quarter. Roll the small balls in the peanuts and put them on a sheet of waxed paper or aluminum foil on a cookie sheet or paper plate. Put them in the freezer until frozen and then put them in a zip style plastic bag or a plastic container and keep them in the freezer.
Please remember that these are higher in calories than most snacks and should be given sparingly.
